Cupcakes Ingredient:

  • Butter 100g

  • Sugar 220g

  • 3 Eggs

  • Cake flour 160g

  • Cocoa powder 38g

  • Baking power 6g

  • Baking soda 2g

  • Orange zest

  • Milk 150g

  • Marshmallows

  • Sprinkles


Direction:

  1. In a mixing bowl, combine butter & sugar until light & fluffy

  2. In a large bowl, sieve all dry ingredients (flour, cocoa powder, baking powder, baking soda) in

  3. Alternate the dry ingredients and the eggs until well combine.

  4. Fold in milk

  5. Pour mixtures into paper cups

  6. Bake at 150 degrees for 25-30mins

*Note: This recipe makes 18 cupcakes.

Italian Buttercream Ingredient:

  • Egg white 92g

  • Sugar 105g

  • Water 57g

  • Unsalted butter 250g

  • Food coloring


Direction:

  1. Combine water & sugar in a pot

  2. Heat over medium heat until 118degrees

  3. Start whipping egg white until foamy

  4. Add sugar syrup into egg whites at a thin and slow stream. Continue whisking until temperature is cool

  5. Add in sliced butter and mix until buttercream formed

  6. Add drops of food coloring and mix until desired color is reached

  7. Transfer buttercream into piping bag


Tips: Frosting can be made 1-2 days in advance, cover tightly and transfer to the refrigerator. Remove from the refrigerator and bring to room temperature before frosting cupcakes/cakes.
